The Surprising Low-Fat Snack Secret of a Desperate Mom
Recipes for more healthful, yet full-of-flavor, fat-free and low-fat snacks and desserts
If You're like my two teens and me, you're hooked on Munchies.
OK, we both know... not the best idea. So a few years ago, I set out on a quest to do something about the way we ate. And to become more health conscious.
Simply put, I had to "prune the fat." No way around it. Thing is, we were reluctant to give up our favorite yummy desserts and snacks. Yes, I've been told there's such a thing as "will power." But... the kids wanted a goody. I wanted a goody. I was desperate!
So here's how I solved the problem.
By trial and error using inexpensive, off-the-shelf substitutes I created recipes for more healthful, yet full-of-flavor, fat-free and low-fat cookies, cakes, burgers, French fries, strudels, dips, sundaes, brownies, onion rings, pizzas, potato chips, frostings, pies, and a bunch more. When friends and family asked for second helpings - and the recipe - I knew I had a winner.
SCRUMPTIOUS LOW-FAT PEANUT BUTTER COOKIES (Makes 4 1/2 dozen. There's only 1.5 grams of fat per cookie.)
1/3 cup light margarine 1/4 cup creamy peanut butter 3/4 cup packed brown sugar 1 egg 1 teaspoon vanilla 1 3/4 cups flour 1/2 teaspoon baking soda 1/4 teaspoon salt
Preheat over to 350 degrees.
In a large bowl, combine the margarine and peanut butter. Mix until fluffy. Add brown sugar, egg and vanilla. Beat well. Add remaining ingredients and mix well.
Shape dough into 1-inch balls. Place balls 2 inches apart on an ungreased baking sheet. Flatten dough in a criss-cross pattern with a fork. Bake for 9 minutes or until lightly brown. Cool on wire racks.
CRISPY FAT-FREE ONION RINGS(Makes 4 servings. There's 0 grams of fat per serving.)
flour for dredging 1 cup homemade bread crumbs or finely crushed cornflake crumbs 1/2 teaspoon salt or seasoned salt 1 large sweet onion, sliced 1/4 inch thick, separated into rings 1/2 cup non-fat egg substitute (you may need a bit more) butter butter flavored non-stick spray
Preheat oven to 450 degrees.
Dredge each onion ring in flour to coat.
In a large sealable bag, combine bread crumbs or cornflake crumbs and salt. Place the egg substitute in a small shallow bowl. Dip each flour-coated onion ring, first in the egg substitute, then shake to coat in the sealable bag (do just 1 or 2 at a time).
Place in a single layer on a non-stick baking sheet coated with non-stick spray. Lightly moisten the onion rings with the spray. Bake for 10 to 15 minutes. Serve hot.
SINFUL FAT-FREE APPLE COFFEE CAKE (Makes nine servings. There's 0 grams of fat per serving.)
1 cup flour 1 1/2 cup teaspoons baking powder 1/2 teaspoon salt 2 teaspoons butter flavored sprinkles 3/4 cup packed brown sugar 1/3 cup non-fat milk 2 egg whites or 1/3 cup non-fat egg substitute 1/3 cup corn syrup 2 medium apples, peeled and cut into 1/2-inch wedges 2 tablespoons cinnamon/sugar
Preheat oven to 350 degrees. Coat an 8 or 9-inch round cake pan with non-stick spray.
In a large bowl, combine flour, baking powder, salt and butter flavored sprinkles. Using a wire whisk, mix in brown sugar and milk. Whisk in egg whites and corn syrup. Mix until smooth.
Pour into the prepared pan and arrange apples over the top. Sprinkle with cinnamon/sugar. Bake for 50 minutes, or until a toothpick inserted into the center comes out clean. Cool in pan or wire rack.
Now we look forward to our favorite "forbidden" snacks and rich tasting desserts, like these, often. And we still keep out percentage of fat where it's supposed to be... less than 30%! My family's happy. I'm happy. Life's good.
